I love egg salad sandwiches, especially in the summer. It’s easy, it’s cool and refreshing, and you can make as much or as little as you like at a time. I keep hard boiled eggs in the fridge just for this purpose. My kids don’t go for the egg salad too much, but they do reach for a hard boiled egg. So I’ll peel an egg for each of them, then two for me and mix up this quick egg salad for a sandwich.
What I don’t like, though, is mayo in my egg salad. Don’t get me wrong- I have lots of love for mayo. I’ll slather some on my cheeseburger, my BLT is not complete without a generous schmear, and it is the base for some delicious sauces and dips.
But in an egg salad? Meh.
So what do I use instead?
Marzetti Slaw Dressing.
Maybe it’s because this is the way my mom always made egg salad, but I just love Marzetti Slaw Dressing in most of my summertime salads. It provides a nice vinegar-y tang and is so creamy without being goopy. Plus it doesn’t give you that oily feel I think mayo gives to salads like these.
I usually keep my egg salads simple: eggs, Marzetti slaw dressing, sweet relish, some salt and pepper. That’s it. I love a generous heaping on some crisp lettuce, sandwiched in a bun.
If I’m just making this for myself, I’ll smash up my eggs, drizzle in the slaw dressing, plop in a small scoop of the relish and lunch is ready in no time. But it is easy to make a larger batch for a crowd, or just to have ready in your fridge for lunch all week.
If you do make this ahead of time, you may find you need to add a bit more Marzetti dressing after it has sat in the fridge for a while. All those yolks will soak up the dressing, making it a bit more dry than it was when you originally mixed it up. Just drizzle in a bit at a time until you get it the way you like.

- 8 hard boiled eggs
- ¼ cup Marzetti Slaw Dressing, regular or lite
- 2 tablespoons sweet relish
- ½ teaspoon kosher salt
- ¼ teaspoon pepper
- 4 sandwich buns
- 8 large pieces of lettuce
- In a large bowl, smash hard boiled eggs with fork.
- Mix in slaw dressing, relish, salt and pepper.
- Serve on sandwich buns with lettuce.
